Since the very beginning of time, people have been required to preserve food. The entire process could take a considerable amount of time and energy, but it was much better than going hungry in the winter season. Early methods of preservation included methods such as smoking, drying, fermenting, or cooling/freezing foods (given the right type of environment). Later on, some more methods were developed like pickling in acid (such as vinegar), curing with salts, and making jams and jellies along with honey and sugar. None of these approaches was ideal enough and the search continued further for better methods that were quicker, more reliable, and made the food much easier to store and transport.

From the modern perspective, we are also able to see that several of these approaches tend to be quite unhealthy. Either the process itself causes considerable harm to the food (i.e. the smoking process further generates carcinogens), or the process also involves the addition of enormous amounts of unhealthy compounds, like salt and sugar. The ones interested in preserving food for certain health reasons will be able to find many older methods wanting.

Canning food preservation has now become extremely popular. It was a quite safe, effective, inexpensive, and relatively simpler process. Nowadays, people were able to use one method to preserve just about anything: fruits, vegetables, soups, sauces, and meats.

The canning process is pretty simple. Firstly, a tin can or glass jar is filled with food and liquid (usually water). After the container has been properly sealed, it is heated and usually put under pressure. This particular process helps kill any microorganisms that could further cause illness or spoil food. When the can or jar is removed from the water, the air inside is compressed and the contents are sealed off from the outside world. The seal then protects the food from new microorganisms entering and from oxidization from the air. Post this, the food may be conveniently stored and enjoyed at a later date.

Until the rise of the modern grocery stores, canning fruits and vegetables remained pretty common in almost every household. It was a necessity and also a way of life. Here are some reasons for this:
