Ingredient list

For the hot cross bun cake:

  • 125g unsalted butter, softened
  • 150g brown sugar (light or dark for caramel depth)
  • 2 large eggs
  • 2 tsp vanilla extract

  • 250ml buttermilk
  • 250g plain flour
  • 50g wholemeal flour
  • 2 tsp baking powder

  • 400g icing sugar, sifted
  • Zest of 1 large orange
  • 2 tbsp fresh orange juice
  • 1 tsp vanilla extract

Simple steps to Easter baking bliss

Method

Step 1: Prep the oven & ingredients

  • Preheat the oven to 175°C (fan-forced 160°C).
  • Line a 20cm round cake tin with baking paper.
  • Soak the dried fruit in 2 tbsp warm water for 10 minutes, then drain.

Step 2: Make the dough

  • In a large mixing bowl, beat butter and brown sugar together until creamy and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract and molasses.
  • In a separate bowl, whisk together flours, baking powder, salt, and spices.
  • Fold half the flour mixture into the wet ingredients, followed by half the buttermilk. Repeat until fully combined.
  • Gently fold in the soaked dried fruit.

Step 3: Bake the cake

  • Pour the batter into the prepared tin and smooth the top.
  • Bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
  • Let the cake cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Step 4: Make the buttercream

  • In a stand mixer (or using a hand mixer), beat butter until light and fluffy (about 2 minutes).
  • Gradually add icing sugar, beating well between additions.
  • Mix in orange zest, orange juice, and vanilla extract, and beat for another 2 minutes until smooth.

Step 5: Toast the bun crumbs & decorate

  • Crumble a stale hot cross bun into small pieces.
  • Spread onto a baking tray and toast at 150°C for 10 minutes, until golden and crisp. Let cool.
  • Frost the cooled cake with orange buttercream.
  • Sprinkle with toasted bun crumbs and add fresh figs or muscatels for a final touch.
