Chicken Stir Fried Egg Noodles
Ingredients (Serves 3)
- ? kg of Egg Noodles
- ? Kg boneless Chicken
- ? cabbage
- 4 carrots
- 3 handful of bean sprouts
- 4 Eggs (Preferable Large Free Range)
- Toasted Sesame seed Oil or Stir Fry Oil
- 4 Tbs of Dark Soya Sauce
- 1 Tbs of Maggi seasoning sauce
- 1 Tbs of Oyster Sauce
- Ground Pepper
- 3 Spring Onions
- 1 Tsp of sugar1 Tsp of Garlic and ? Tsp of Ginger (Paste)
- Salt to tast
Ingredients for Garlic sauce
- 4 Glove of Fresh Garlic
- 1 Tbs of Malt Vinegar
- ? Tbs of Salt
- 1 Tbs of Sugar
- 1 glass of Water
Preparing the Ingredients.
Dice
the Chicken into strips of 1cm x 3cm. In a Wok or deep sauce pan, pour
about 5 tbs of Oil and set the fire on medium. Once the oil starts to
heat up, add the chicken, garlic and ginger past and season with salt
and pepper to taste and stir regularly. Once the chicken start to turn
light brown, remove and place into a container.
Note: Do not disguard the Oil that you have fried the chicken in.
Break
4 eggs into a bowl,add pepper and whisk for 30 seconds. In a frying pan
use about 1 tps of oil and pour enough egg to form a pancake. Fry on
both sides and place on a chopping board. Repeat until all the egg has
been fried and place on top of each other on the chopping board.
Cut the egg layers into 6 square and store in a container.
Slice the Cabbage into ? inch thick and Dice the carrot into Strips about ? inch x ? Inch.
Bias Cut the Spring Onion.
Preparing the sauce (Garlic Sauce)
In a liquid food processor, add the garlic gloves, sugar, salt, vinegar and water and blend for 15 second.
Method
In a wok or large Sauce pan, add 2 tbs of oil and turn the heat to medium.
Add
the noodles and stir regularly with chopstick or with a wooden spoon
for about 20 second. Add the sugar, pepper and about 4 tbs of the
prepared sauce (garlic Sauce) and stir, add the carrots and stir fry for
about 3 minute.
Reduce
the heat to low and add the cabbage, bean sprouts, fried chicken, eggs
and stir well. Add the oil that was left from frying the chicken and
stir fry for another minute..
Add
the soya sauce stir well, then add the maggi and the oyster sauce and
stir. Increase the heat to medium and for another 30 to 50 second and
stir constantly and turn heat off
Add
the bias cut spring onions and stir through and serve on a large
plate. Sprinkle about 3 pince of sesame seeds on the noodles and serve
Serving Suggestion
- Red chilli paste and garlic sauce or you can substitute with just Sweet Chilli Sauce.
