Abundance Grown Through the Weeds of Adversity

By Joyce Parker-HydeThanksgiving has past and Christmas approaches once again and people set themselves up for heartburn, heartache and heart attacks.
One occasion follows upon the the other where food is the main reason for the occasion.
Any semblance of religious observance, has long ago been relegated to perfunctory status, a nod at tradition and forthwith to the table.

Television and all other media have begun to indoctrinate willing and susceptible minds into the belief that they must spend money to be happy, to make their loved ones happy; and present the over priced material objects that will certainly accomplish that goal.
Never mind that this has never worked.
Not once.
Happiness is not nurtured by going into debt, greed and gluttony.

Creating an income in a post katrina New Orleans, is not an undertaking for the faint hearted.
Logistics and lack of services, uncertainty of the reliability of services, have only lent themselves to bolster my strong need and desire to create my own employment.

I have been blessed with a fertile mind, and have had the luxury of exploring my options for an extended period of time, in a lot of different places and now find that I need every skill I picked up along the way.

while cleaning the ever present and never ending debris and remnants of the storm and the trifling nature of most of my fellow citizens'-pecans started falling on my head.

Well there are a lot of interesting things about pecans, as it turns out.
They are very healthy for you!

Pecans are a good source of protein and unsaturated fats. A diet rich in nuts can lower the risk of gallstones in women.[8] The antioxidants and plant sterols found in pecans reduce high cholesterol by reducing the "bad" LDL cholesterol levels.[9]

Clinical research published in the Journal of Nutrition (September 2001) found that eating about a handful of pecans each day may help lower cholesterol levels similar to what is often seen with cholesterol-lowering medications.[10] Research conducted at the University of Georgia has also confirmed that pecans contain plant sterols, which are known for their cholesterol-lowering ability.[11]

The U.S. Food and Drug Administration (FDA) has acknowledged this and related research and approved the following qualified health claim: "Scientific evidence suggests, but does not prove, that eating 1.5 ounces per day of most nuts, such as pecans, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease."[12] "This nut is an important source of ellagic acid. Pecan nuts are a good low fat source of vitamin E and also have anti-cancer effects. They can also, if eaten correctly, lead to lower cholesterol levels."[13]
