The Truffle- Ugly, Smelly and Expensive As All Get-Out! LOL
These days truffles go for about $1500.00 US for an ounce, making truffles more expensive than gold, and I'm at a total loss as to why...
The main varieties are the white truffle from Italy and the black truffle from France, but don't be fooled, these ugly fungi, can be found almost anywhere there is moist forest vegetation and damp soil...
Dogs and Pigs are usually trained to sniff out these underground stinkballs, but Humans can find them by smell, too-- Those who use animals are simply too lazy to crawl around and find them...
Truffle's smell strongly of, well..... Urine, after eating asparagus and drinking beer all night. Or like Mushrooms that have gone bad in your veggie bin...
Top chefs and cooks though, cherish these little delights, use them so sparingly, you would think that the average diner would be able to taste them at all... But that strong aroma comes right through even the steamy-est dishes like Rissoto.. which is simply starchy rice and broth, boiled down to a pudding-like consistancy- Add truffles and this side dish will cost you about $15.00- $25.00 US! :)

Although I like to eat mushrooms and truffles, I can't see paying a kings ransom for them... I'll take a walk in the woods after a light rain, and they are everywhere! As for truffles, please don't kick me in the butt if you should happen to see me crawling aroung on all fours and sniffing the ground...
I know exactly what I'm looking for, and I'm using my Lycanthropic instincts to find "Stinky Gold"! LOL!

Depending on your tastes, you can make fine Foie Gras substitutes:

If you simply must have some Duck in your Pate', use the fat from one that you cooked, or but duck fat from a store, and add it to your chicken liver, or calves liver... Truffles can be substituted with black dried Shiitake flakes... be creative, eat well, save bucks, so you can buy a house from me! LOL! :)

I tried it once. YUK!! give me my calf liver and chicken liver any day. Foie gras just tastes greasy to me.

The spelling that I used is the correct one, but it can be spelled in many different ways.. nobody but a French person can seem to pronounce it anyways! :)

Foie Gras is over rated-- expensive and controversial... Why eat something that makes you feel bad?
Great cooks can create wonderful subsitutes for it... I have used calves liver as a substitute-- With a little kitchen trickery, there are many ways to please palettes and ease minds! :)

If there is anything less appetizing or more expensive than a truffle i don't know what it is. But in my book for sheer stupidity in glorifying and pricing foods Froie Gras has to run a close second! (See I can't even spell the crap right LOL!)

Ummmmmmmmmm! I'm having wild Oyster mushrooms- lightly grilled with onion and garlic for an appetiser, and broiled baby Bellas with Salmon and Pasta for lunch-- LIFE IS GOOD! :)
