Mojo-Style Chicken

Ingredients:
garlic, green chile, olive oil. orange juice, lime juice, orange peel, oregano, cumin, chicken

Instructions:

6 cloves garlic chopped
1 small red or green chile pepper, seeded and chopped
1tbsp olive oil
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1 1/2 tsp shredded orange peel
1 tsp each oregano and ground cumin
2 lb meaty chicken pieces (breast halves, thights, or drumsticks)

1. For marinade, cook garlic and chile pepper in olive oil. Cool. stir in in orange joice, lime juice, orange peel, oregano, cumin and salt and pepper to taste.

2. Skin chicken peices, if desired. Place chicken in a resealable plastic bag, pour in all but 1/4 cup of the marinade. Place reserved marinade in the refrigerator. Seal bag. Refrigerate for 2 to 4 hours. turning occasionally.

3. Preheat grill to medium heat and prepare for indirecr cooking. Drain chicken, discard marinade. Grill chicken pieces, covered for 50 to 60 minutes or until no longer pink (170 F) Warm reserved marinade and serve with chicken.

**Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
