White hat is following Google's guidelines in regards to search engine optimization (SEO). Doing things white hat you are teaming up with Google and they will reward your eventually. Doing things black hat is gaming the system and trying to trick Google.

Google doesn't like to be tricked. Most black hat methods work, but they don't work long term. Doing things the white hat way (Article Submissions, etc.) you don't have to worry about updates from Google like Penguin. So doing things white hat will give you long term sustainability results. Doing things black hat will give you faster results but you will always be looking over your shoulder.

Do you want to build your business with bricks that can weather storms wind rain etc. or do you want to build your business out of straw which might be faster and easier but as soon as a gust of wind comes your out of business.
