Yesterday, I made some home-made "Shepherd's Pie". It brought me good old memories, because I am from an Italian descent and I learned about it more when I got married to French Canadian born in Ontario but parents are originally from Quebec. I never new how it was created until I was with my in laws. You need at least 1 1/2 pounds of mince meat-I use 2 small cans of corn and 1 small can of cream corn. It take 6 to 8 medium potatoes.It takes 1 medium onions or small Spanish onions that I love more because I do not digest all onions.Peel the potatoes and boil them until soft enough to mash them.
Cut the onions in small chunks.You take some canola oil brown the onions, when browned add the minced meat and spice it.I spice it with garlic powder or you can brown it with onions too.I add parsley, oregano, pepper, some salt, coriander, a little basil, at your taste I add a little chili to make it blend better.When the meat is fully cooked transfer it to a 12x9 corning ware dish or your normal metal one will do just fine. In a little cup 2 teaspoons of cornstarch mix it with a one once of Campbell beef sauce or beef Bovril because it makes the meal less drier. Add the 2 small can corn and spread it evenly over the meat and then add the small can of cream corn also spread it evenly and spread the mashed potatoes evenly that have been spiced with parsley, salt, and paprika. Bake at 400 deg F for 30 min until the top is browned enough for you. Enjoy it, it is delicious.
