SPICY CAJUN FAVORITES

Easy Red Beans and Rice

1 pkg. smoked sausage (sliced)

2 large cans Blue Runner red beans

1/2 cup each of "the trinity" (onions, celery, and bell pepper)

1/2 tsp. Tabasco

1 tsp. cajun seasoning

1/4 cup water

Brown sausage in large Dutch oven, on medium heat.  Drain excess oil.  Add "the trinity" , and cook , stirring constantly, for 5 minutes.  Add water, then red beans and seasonings, and mix well.   Cover and simmer for 30 minutes. Serve over hot cooked rice. Serves 6.
