How to get spinach down the hatch!

This is one of my favorite recipes. I've never served it to anyone who didn't like it. Even folks who don't eat veggies gobble it up and ask for more!

Crowd Pleaser Casserole

1 ½ Pounds Ground Beef (or Ground Turkey)
1 small onion, chopped
1 clove garlic, minced
1 ½ cups Picante Sauce
1 large green pepper, diced
2 10 oz frozen spinach, thawed and squeezed dry
1 8oz can tomato sauce
2 cans of diced tomatoes with Jalapenos
1 packet of Taco Seasoning Mix
1 TBLS Lime Juice
1 ½ tsp salt

*4 oz shredded Monterey Jack Cheese (for topping after baking)

Brown meat with onion and garlic; drain. Add remaining ingredients and simmer, uncovered, for 20 minutes, stirring occasionally.

12 Flour or Corn Tortillas (I like flour.)
1 cup sour cream

Arrange 6 tortillias on the bottom and up the sides of a lightly greased 13 x 9 pan, overlapping as necessary. Spread a thin layer of sour cream evenly over tortillas. Top with half the meat mixture.

Top with remaining tortillas and repeat process.

Bake at 350 for 30 minutes.

Remove from oven and sprinkle Monterey Jack cheese over top. Return to oven for 5 minutes.

Shredded lettuce and sliced olives ( optional for topping )

Garnish with shredded lettuce and olives, if desired.

This is a great recipe to double. It freezes very well and is easy to pull out if a last minute meal is needed. If baking from frozen, bake for an hour.
