Summer squash is young, soft-skinned fruit that is harvested earlier in the season and used right away. It is a relative of both the melon and the cucumber.
Summer squash is great eaten raw, steamed, sautéed, or added to any pasta sauce or soup, or served as a vegetable with drawn butter or cream sauce, or it may be served mashed.
Summer squash is a good source of vitamin C, and both types are moderately good sources of magnesium and potassium.
