Dried herbs are quite different from the spices. They require some time to release their flavours. Trust me; dried herbs can infuse great flavours when they are left for some time. You cannot just use your dried herbs like that. It needs a proper storage facility. For instance, when you buy mixed herbs, you can use them in your sauces and stews as it would need some time to release the flavours.

You would agree that freshly grounded spices are way better than the pre-ground spices. So, if you want to use freshly grounded spices, you would need to invest in excellent spice grounder.
