We do need vegetables, meats and fishes for cooking. But the most essential thing which is needed for cooking is spices. We need spices on a regular basis. Without spice, any dish is incomplete. Carom Seeds (Ajwain): Pungent tiny seeds which have very strong flavors and smell. It has a slightly bitter taste also. Ones roasted in hot oil or ghee it is used for seasoning a dish. It also fulfills the medical purpose to aid in digestion.

Cinnamon (Darchini): These sticks have a sweet aroma that adds a very nice smell to the cooked dish. It is roasted and dried before using in a dish. It intensifies the smell of a particular dish and makes it more attractive.

Cloves (Laung): These are dried up flower buds needed for culinary purposes.  It has a strong and warm flavor. Sometimes burnt clove is also used in some sweet dishes to add colors. It also helps in reducing throat sore and cough.

Coriander Seeds (Dhania): Dry seeds which are light brown or golden in color. It has an earthy and nutty flavor. These seeds are often grounded and the powder is used while cooking. Sometimes the seeds are also roasted and added in a dish for a different color.

Cumin Seeds (Jeera):  This spice has a warm and earthy aroma. Most commonly used in Indian cooking, it can be used as a powder or roasted to add a smoky flavor.

Green Cardamom (Choti Elaich): Cardamom seeds are grounded into powder and used in cooking. Be it vegetables, meat or sweet dish elaich is a must to add extra flavor.

Mustard Seeds (Sarson): There are three types of mustard that are used in cooking -black mustard, white mustard and yellow mustard. Sometimes the seeds are grounded to make a paste and used in the gravy. Other times, it is used as seeds fried in hot oil. Mustard oil is a very common cooking medium. It has a smell.

Nutmeg (Jaiphal): These are the seeds of a fruit. Used in a ground form, it is a very common spice used in making biriyanis.

Without spices, any cooking is almost tasteless. These actually make a dish more delicious.
