A great Recipe for bony types of fish like Shad
1Large Shad(4lbs or more)
Melted butter
Melted Crisco
Salt
Pepper
Very thin lemon slices
3-4 Bay leaves
Brown paper bag or large brown paper.
Clean and butterfly the fish and brush inside and out with melted butter. Sprinkle with salt and pepper. Place a couple of thin lemon slices and the bay leaves inside of the fish and fold it closed. Use melted Crisco to coat the inside of the bag or paper. Fold the edges to make a tight seal. Coat the outside of the bag or paper with the melted Crisco and place it in a covered roasting pan. Bake for 6 hours at 250 degrees. This cooking process causes the small bones to disintegrate.

And that is an excellent old fashioned way to cook those fish! It's from Colonial times I believe! :)
