On a bowl mash the Avocado with the Lemon juice, Salt and Pepper. Set aside. On another bowl mix the Cherry tomatoes, Snow Pea sprouts, Basil, Pine nuts and Olive oil. Set aside. Brush the bread with Olive oil and toast until golden brown. To assemble cover the toasted bread with the Avocado mixture, then put the Tomato mixture on top and the Ricotta over it. Finish with a drizzle of Olive oil and put a Lemon wedge on the side.
