I think my Aunt found this recipe in an Enquirer magazine many moons ago. 


It is a quick and easy recipe that even the kids will love.  You can probably change some things around to make it a bit healthier.  This recipe comes from the 70's. I will list it as is.


Easy Chicken Pot Pie


Ingredients


One whole boiler chicken


Veggies - Frozen, Fresh, or Canned


Suggestions, Carrots, English Peas, Butter Beans, Potatos


2 cans of Cream of Celery Soup


Flour, Milk, Butter, and Salt or other seasonings that you prefer

Preparation


 


Boil one whole chicken in a pot of water. Desired Seasoning


Allow to cool after fully cooked, reserve 1 to 1/2 cups of chicken broth.


Chip off chicken from the bone


Place chicken in a baking dish


Pour chicken broth on top


Pour two cans of cream of celery soup on top


Add in desired veggies.  Cooked carrots, english peas or butter beans. 2 cooked potatoes.


Personal Note;  (If you are in a hurry, and don't mind canned, this does make it quicker.  You can use frozen or fresh veggies too, even canned chicken) I prefer all fresh, but it's up to you and how much time you have to prepare your meal.


Add 2-3 boiled eggs, chopped, if desired.


Mix 1 1/2 cups of flour, 1 whole stick of melted butter, salt, and 1 cup of milk,in a mixing bowl.


Stir until all ingredients are dissolved.


Spread flour, butter, milk mixture evenly over the top of your chicken pot pie.


Do not cover.


Cook at 375 degrees until you have a beautiful, lightly browned crust.
