Our programs cover standard nutrition theory and then delve into specialized areas like paleo and primal eating, vegetarian and vegan diets. We strongly encourage students and graduates to share their knowledge by giving classes in their community, particularly to groups like children and the elderly. For example, ACHS graduate Lisa Powell gives wonderful classes on healthy cooking in the Portland area with titles like Traditional Healing in the Kitchen.
