The Development of Potato Chips Production Technology

by Lydia L. sale

There is no doubt that potato chips are the most beloved snack of all the time. A complete potato chips production line guarantees that everyone can have their own satisfaction when it comes to chip flavors, such as barbecue, original, sour cream & onion, Salt & Vinegar, or even tastes like caviar, octopus and garlic prawns. But when the technology is not mature yet, what’s the potato chips production like?

1. Manual Production before 1920s

Potato chips’ origin can date back to 1853 in a hotel in US. The chef, George Crum received complaint that his fried potatoes were too thick. So he sliced the potatoes very thin, fried them until crisp, salted them and sent them back. Surprisingly, this kind of chips was enjoyed by the customer and then became a fad. At this period, the potato chips were popular in the restaurant and grocery stores in small region, as the potato chips was peeled and sliced only by hand.

2. Semi-automatic Production from 1920s to 1980s
Potato chips remain popular in the market, several innovations mark the industry’s further development. In 1920, Herman Lay developed the mechanical potato peeler, which improved peeling efficiency greatly. This great innovation was followed by several others. In 1926, potato chips entrepreneur Laura Scudder pioneered a new method of potato chips packing, that is, in sealed bags made from waxed paper with the ends ironed or stapled together. Early 1930s witnessed the appearance of cellophane and glassine bags. For many years, potato chips were packed in cracker barrels or tins, delivered by horse-drawn wagons, which would make chips at the bottom easy to damp and crumble. The innovative method of packing provided protection against crushing and helped keep the chips crisp and crunchy. In the 1950s, the owner of an Irish crisp company Tayto Joe Murphy developed seasoning technology, which allowed salt or other natural and artificial flavors to be added as needed. All these notable innovations paved way for the mass production of potato chips.
3. Automatic Production from late 1980s

With the development of technology, innovations are becoming more and more common. In 1985, the microprocessor-controlled weighing heads was invented. Optical sorting technology invented in 1990 can help remove defective products. Concerning the matter of packing, plastic bags with nitrogen blown in prior to sealing appeared in 1995 can preserve freshness, reduce crumbling and prolong shelf life. Today, various kinds of materials including PP, PC, PVC, HDPE, PS are used to pack potato chips. Innovations mentioned above contribute greatly to the potato chips production line, which will finish the whole production perfectly and satisfy the vast demand for potato chips in the market.
From above description about the development of potato chips processing, we know that today’s technology is mature, and equipment is advanced. Plus, potato chips show no sign of declining in popularity. In 2012, the worldwide sales volume of potato chips is around 30 billion dollars, which means business in potato chips industry will be an advantageous choice.
