via an amalgamation of 2 molecules of monosacharides; glucose, and galactose.
The next nutrient that is present in the milk is the essential
amino acids. Protein from the milk has a good content of all the essential
amino acids. Milk has about 51% of the essential amino acids. Casein found in
the milk is also exclusive to the cow milk. This casein can be further
sub-divided into 5 major categories such as β, gamma, k-casein, αs1 and αs2.
Next important nutrient that is present in cow milk is the fat
that further contributes to the benefits
of milk. The digestibility of this milk fat is exceptionally higher than
the oils and the fats solely because of the presence of the fat globules in the
milk. These are found in the aqueous form and convert into emulsion. When this
milk fat is added to the diet, the energy density of the body is increased.
Milk also forms a protective top coating on the enamel. This protects the teeth
and makes them strong.
Fourth most important nutrient that is found in cow milk is the
phospholipids i.e. the presence of phosphorus in the form of molecules. Fatty
acids and glycerol are also present in the milk. Largely milk has a nitrogenous
base. Some of the main phospholipids that are found in the milk are Cephalin,
Sphingomyelin, and Lecithin. These are fat soluble yet imbibe water in it and
swell.
Milk also contains minerals in the form of chlorides such as
magnesium, sodium, citrates, and potassium. There are a number of vitamins also
found in the milk. Some of the vitamins found in the milk are Vitamin A, D, E
and K. Besides them there are also several water soluble vitamins present in
the milk.
