Minced Turkey & Chili Cheese Stuffed Peppers
Because turkeys high in protein…
Peppers count towards your healthy vegetable intake…
And cheese… Well cheese is just delicious right!?
This took me around 10 minutes of actual hands on cooking time and a total of 30 minutes until it was ready to serve up…
Here’s everything you’ll need;
- 6 large bell peppers, any colour
- 200g brown rice, cooked
- 500g minced turkey
- 1 tablespoon olive oil
- Garlic (fresh or packaged)
- Chill flakes
- 1 onion, diced
- 1 tin chopped tomatoes
- Basil/Oregano
- Grated cheese/low fat cheese
- Salt and pepper
And here’s what to do with those ingredients;
1. Cut off the tops of your peppers and remove the seeds, trim the bottoms to help them sit flat in the frying pan you’ll be using. In a separate large pan boil the peppers for 5 minutes, remove from water and turn upside down onto a paper towel to dry.
2. In a large frying pan add your olive oil, garlic and onion and cook until tender. Add the turkey and brown until thoroughly cooked.
3. Add the crushed tomatoes, rice, basil/oregano, chili flakes, salt, pepper and a little shredded cheese - stir until blended.
4. Fill the peppers evenly with the mixture and place on a lightly greased baking tray. Bake uncovered for 25 to 30 minutes. Remove and add the remaining cheese to the top of peppers and bake for an additional 5 minutes or until the cheese is melted.
If you’re not a fan of turkey mince (or have none sat in the fridge) you can used minced beef instead – just be sure to get the good stuff that is less than 5% fat!
