A more sophisticated cheese variety is blue cheese. It’s known for its very sharp taste and veins which can be blue, blue-green or blue-grey. These veins are caused by the culture penicillium, which is injected into it during the coagulation process. Another distinct cheese variety is Cheddar Cheese.  Produced from pasteurized cow’s milk in the village of Cheddar, England, it  is known for its tangy and crumbly texture. It is produced through a unique cheddaring process which lends a distinctive taste.  Cheddar cheese that has been matured for five to six years has a peculiar taste and a very crumbly texture. The color of this cheese varies from off white to yellowish orange.  The orange color arises when annatto is added to it, which is a natural dye. This cheese is highly popular in the U.K and it accounts for 51 percent of its annual cheese production. At one time it was the favorite of the royalty. Today it is produced in countries across the world.

The most well-know cheese in the market is Swiss Cheese. A variety of cheeses come under this category. Made in Switzerland,  these cheeses are produced using cow’s milks. There are characterized by large holes which form when carbon-di-oxide is released during the maturation process.

When storing any of these types of cheese be sure to put them at the bottom of the refrigerator where they are least affected by changes in temperature. Do not keep them alongside strong smelling foods as they will absorb their aroma and can also get spoilt.
