Flavorful Salmon Recipes

One of the best things about salmon is its versatility; it’s delicious on its own or in more complex dishes featuring a wide variety of seasonings. To take your meal planning up a notch, try one of these simple salmon recipes with knock-out flavors:

Cajun Salmon Pasta

Spicy seasonings make this Cajun Salmon Pasta a standout meal.

Ingredients

4 frozen Morey’s Wild Salmon Steakhouse filets

8 oz dried fettuccine pasta

1 Tbsp olive oil

2 Tbsp unsalted butter

1/2 cup diced yellow onion

1/2 cup sliced portabella mushrooms

4 Tbsp sun-dried tomatoes

4 cloves minced garlic

1 cup heavy cream

1 Tbsp Cajun seasoning

Black olives

1/4 cup fresh basil leaves, torn

Grated fresh Parmesan to taste

Salt and freshly ground black pepper to taste

 

Instructions

         Cook pasta according to package instructions.

         While the pasta cooks, heat oil and butter over medium-low heat in a skillet. Add the onions, garlic, mushrooms, and tomatoes and sauté until the onions are translucent, about 7 minute.

         Pour the cream and Cajun seasoning into the skillet and stir for 1-2 minutes until the sauce is smooth and creamy.

         Add the salmon to the pan. Break filets up gently with a fork as it cooks and simmer for 2-3 more minutes until cooked through.

         Gently toss the cooked pasta with the salmon and sauce. Salt and pepper to taste.

         Top with fresh basil and Parmesan and serve immediately.

 

Shortcut Salmon Banh Mi

Take your tastebuds on a trip to Vietnam with these spicy, savory sandwiches.

Ingredients

For the slaw:

the juice of 2 fresh limes

2 Tbsp honey

1/4 cup sesame oil

1 Tbsp rice wine vinegar

1 cup julienned carrots

1 cup julienned cucumber

1 cup fresh chopped cilantro

1 thinly sliced tomato

For the spicy mayo:

1 Tbsp Sriracha

1/4 cup mayonnaise

 

For the sandwiches:

2 frozen Morey’s Wild Salmon Steakhouse filets

1 baguette, cut into 4 pieces

Salt and freshly ground black pepper to taste

 

Instructions

         Cook salmon filets according to package directions. Let cool slightly and slice thinly.

         Create the slaw dressing by whisking together the lime juice, honey, sesame oil, vinegar, salt, and pepper.

         Prepare the slaw by tossing together the dressing with the carrots and cucumber.

         In a separate bowl, whisk together the mayonnaise and Sriracha.

         To assemble the sandwiches:

o   Split each roll in half.

o   Spread with Sriracha mayo.

o   Place 1/4 cup of slaw on the bottom roll. Add salmon.

o   Layer sliced tomatoes over the salmon and garnish with cilantro

Serve Immediately. Slaw can also be served on the side if desired.
