Clarified butter vs butter: Some basic differences between the two

Clarified butter is derived from unsalted milk butter. The discussion of clarified butter vs butter is a common one. But to understand clarified butter we need to understand butter first. It is a pure dairy staple that contains 80% of milk fat, 15% of water, and less than 5% of milk solids. But clarified butter is 100% butterfat, free from any kind of water and milk solids.

This is because clarified butter is prepared by boiling regular butter, evaporating the water, and straining the milk solids. Though clarified butter is also called ghee butter, they have some differences. Clarified butter is a great substitute for regular butter and here are the reasons - 

  • Clarified butter offers a higher smoke point than butter and this is a vital aspect of clarified butter vs butter. 

  • Ghee butter is storage-friendly and can stay fresh for 12 months from the date of manufacturing. Butter needs refrigeration support but ghee does not.

  • If judged on the basis of versatility, clarified butter is the winner. It has a neutral flavor and can adapt to the taste of any dish. However, butter is for a few dishes as it has a salty flavor.
