· Preparation of Dough – After the procurement of raw material, a dough is prepared that contains all the ingredients. The mixing temperature and consistency of the dough play a vital role in manufacture of finest quality of biscuits. The dough is then left to ferment for about 20-26 hours.
· Giving a Shape – The soft dough is now rolled through special compressing machines to get sheets of specific length, width and thickness. The compressed sheets are conditioned to make them hard enough for applying toppings above them. They are then fed into the rotary cutter, a rotating roller with cups attached to it in order to get the desired shape and make it read to bake.
· Baking Process – The biscuits from the rotary cutting machines are put in the oven for baking under desired temperature and duration. Ovens are the basic machinery required for baking purposes. These are primarily classified into gas fired, coal fired and electricity heated ovens.
· Cooling and Testing Process – the warm biscuits are cooled before testing and packaging. The baking process is accompanies by test the linearity of the sample biscuits, their quality, shapes and sizes.
· Packaging and Supply – the product is now sent to the packaging unit for packing. This is the last, yet the most important step in the entire process.
