I'll give you a big head start on your Saint Patrick's Day celebration by referring you a free membership in Guinness' 1759 Society: http://www.guinness.com Don't forget to sign Propositon 317 if you join...

Next comes a recipe for my own "Corned Beef and Cabbage WDNE " (With Damn Near Everything)

This is a big meal for a big crowd! :)

4 Lbs. Corned Beef (You can save money by learning how to this)

2 very large cabbages

1 lb bacon

5 lbs Golden potatos

2 large onions (Red and White) and a bunch of green onions or scallions

1 Bulb of elephant garlic

1 cup of beef suet or lard

One half stick of butter (Pease don't use margerine- I want you live...)

1 beef bullion cube (The big ones)

1 Cup of table syrup

Caraway seeds Seasalt and whole peppercorns to taste...

Corned beef comes already cooked, so heat it by simmering in hot water for 15 minutes or so.

Chop the cabbages into eighths, and put them into boiling salted water for 25 minutes, and then turn the heat down to a simmer...

Peel the potatos (If you wish) and cut them into big chunks. Put these into boiling salted water (In their own pot) for about 20 minutes and lower the heat to a simmer...

Render the bacon by frying it in a skillet until it's crisp, then remove and place on a paper towel... Place the beef suet or lard in the bacon fat and continue to render until you have about two cups of fat... Into this will go the chopped onions and garlic for about 5 minutes... Lower the heat, and add the scallions, and about two cups of the shredded corned beef and the table syrup... Heat through and add one half cup of of water and the bullion cube... and heat at medium for about 30 minutes. This will create a sauce/ gravy...

Chop the cooked, drained cabbage into smaller pieces, top it with crumbled bacon and peppercorns, toss and place into a warming dish. Drain the potatos, add the butter and caraway seeds and mix well...

 Now What?

Well, Some folks like mixing this all together and chowing away... I prefer serving each dish with a dollop of sauce... The cabbage and potatos go very well together with the corned beef. The brown sauce that you've created can really rock when used on other foods like rice, for instance... Don't forget to serve plenty of Guinness (Sip some Irish Mist with it) and Happy St. Patrick's Day to Everybody!

Now for an amusing example of  Irish Mother Love!  Cheers! :)
