Peaceful's Tomato, Crabmeat and Mushroom Risotto...

My appetite is soaring back to it's full strength levels, after enduring a very persistant cold, this sucker tried more comebacks than "Rocky" and "Rambo"! (Do you believe they are making another one?)
This could go very fast, if you want it to... I like cooking my Risotto very slowly, with the help of a beautiful assisting Lady, if possible, but my anti- cold spreading policy made this step one for a later time...
1-2 Lbs of Arboreo rice... gets steamed in 6 cups of water or broth, until it becomes very thick and starchy... Add 2 more cups of broth, and allow the rice to become thicker and more starchy with successive broth adding until the rice becomes thick and creamy like a cereal...
Hand crush peeled and chopped tomatos and some green peppers, and toss them into the rice... Next comes some grilled and chopped baby 'Bella mushrooms, along with chopped sweet scallions and chopped garlic... Be sure to keep stirring your Risotto during this process... Lastly comes the Crabmeat... Fresh is best, but canned is ok... Gently break apart the lumps of meat and distribute them throughout the Risotto... Seasoning to taste with basil, parsley, salt and cracked black pepper...
This dish should be brought to the table piping hot and creamy... Wondeful small dishes of stuff like black olives, cheeses and capers... As well as olive oil and butter shuld be placed so that your guests can dress their Risotto in their own fashion! :)
Now I am hungry... Where's my big cast iron cooking pot? LOL! :)

I agree it should be left alone. It should have been left alone after the first one which was great! I just have this thing about sequels, leave well enough alone! Besides can you see Indy outrunning the big stone ball at his age?!?!?!?

They'll never be able to do that the right way, Cheryl! Raider's and Indiana Jones should be left in peace! I really don't like the way sequel try to weave in commercials and modern themes into their scripts... I will not pay $10.00 to see a giant screen ad! :)
