TODAY'S RECIPE FOR DIABETICS

Hi Everyone,

Here is today's recipe for those of us that have Diabetes, or if you just want to lose weight.

Beef and Cheese Skillet Casserole

Yield: 7 servings

 

Calories per serving: 243 calories

 

Total fat: 8g

 

Cholesterol: 47mg

 

Carbohydrates: 25g

 

Sodium: 504mg

 

Protein: 19g

 

Fiber: 2g

 

 

           Ingredients

2 cups rotini pasta, uncooked

1 pound 90% lean ground beef

1 14.5-ounce can crushed tomatoes

1 8-ounce can tomato sauce

2 teaspoons chili powder

1/8 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon sugar or sugar substitute

2/3 cup shredded, reduced-fat cheddar cheese

 

 

             Directions

Cook pasta according to package directions, omitting salt. Drain.

In a large nonstick skillet, cook ground beef until beginning to brown, about 8-9 minutes. Drain any excess fat.

Add remaining ingredients except cheese and pasta and bring to a boil. Reduce heat and simmer for 6-7 minutes or until beginning to thicken. Fold in cheese and toss with pasta.

 

 

Cucumber and Tomato Salad

          Ingredients

2 cucumbers, peeled and thinly sliced

1 cup chopped tomato

1/2 cup sliced red onion

1/4 cup crumbled Feta cheese

1/2 teaspoon minced garlic

1/3 cup white vinegar

½ teaspoon sugar

2 tablespoons olive oil

Salt and pepper to taste

 

 

          Directions

Use a small bowl, and mix the cucumber, tomato, onion, and feta.

Use a small bowl, and whisk together the garlic, vinegar, sugar, oil, salt, and pepper.

Toss with the cucumber mixture. Let refrigerate until serving.
