Asian Barbecue Chicken & Fresh Herbs

 Ingredients:

1/2 cup BBQ Sauce
1/2 tbsp Sesame Oil
1 tbsp Water
1 Roast Chicken (Meat removed)
2 tbsp Fresh Coriander (Chopped)
2 tbsp Fresh Basil (Torn)
2 Spring Onions (Chopped)
400 g Bok Choy (Rinsed)

Instructions:

Preheat oven to 200°C. Mix together BBQ sauce, sesame oil and water in a small bowl. Microwave on High for 20 seconds and stir until sauce is smooth and runny. Place chicken pieces on a large, flat baking tray and brush with sauce to coat both sides. Add bread to the oven to bake for 10 minutes. Steam bok choy for 10 minutes in a steamer or microwave. Bake chicken for 5 minutes, basting with more sauce and baking for another 5 minutes. Repeat basting and bake for a further 10 minutes, until skin is crisp and sauce sticky. Sprinkle with chopped coriander, basil and green onion. Serve with toasted bread and bok choy.
