Cooking methods like baking, sauteing, slow cooking, or deep frying require high smoke point. The boiling point is just the previous stage of the smoke point. When a cooking fat reaches its smoke point its starts releasing harmful free radicals. It is important to check the nutritional value of the oil. Olive oil, flaxseed oil, butter and several other low smoke point cooking oils are not suitable for high temperature cooking.

The ghee that reaches its burning point at 250 °C, when it changes color. The smoke point of butter is much lower than cow ghee which is 150 °C. If you use low smoke point oils  for high temperature cooking, they will taste burnt. The smoking is evidence that it has broken down due to excessive heat.
