There was a time, long ago, that I did not like vegetables. The thought of them made me cringe and the only way my mom could get me to eat them was by blending them and sneaking them into my food! I was a notoriously picky eater growing up with a voracious sweet tooth. If you had told me at the age of 17 that I would sooner or later be eating a diet largely made of veggies I in all probability would have laughed in your face. It was not until my senior year of high college that I was forced to start out eating vegetables more frequently. Because of some upsetting literature we were reading in English category, I set to change to a vegetarian diet. This was terribly humorous, because vegetarian means that getting meals from vegetables I.e. the food I hated!

I still bear in mind the day I declared myself vegetarian terribly clearly. I didn't even suppose regarding the very fact that I was going to have to start out incorporating greens into my life. I felt so abundant conviction for the ethical cause that I simply didn't assume regarding the large modification I was concerning to make. That night I visited a follower's birthday dinner and ordered and tasted tofu for the primary time. Everyone at the table looked at me funny- I was sitting with a bunch of meat eaters. My first bite was underwhelming to mention the least. The tofu was undercooked, under seasoned, and not firm in any respect. I keep in mind chewing every bite, making an attempt to seem enthused, and thinking that in some unspecified time in the future I would get used to the current mushy meat replacement.
