Roasted vegetable and couscous salad

Sweetly, slow-roasted vegetables do all the talking in this filling and fragrant lunch. This simple process can be quickly thrown together the night before, but you are sure to be feeling smug all day.

How to prepare it

  1. The oven should be heated at about 180 to 200 C. slice the pepper and squash into bite size pieces. Tip all the veg into a baking tray, add 2 tablespoon full of oil, garlic, and seasoning. This should be mixed and roasted for 20 minutes. Add harissa, onion, almonds, and cumin. Roast for another 20 minutes, then cool.
  2. Put the couscous into a large bowl, pour over the stock, cover, and set aside for 10 minutes. Fuzz up with a fork.
  3. In a bowl, mix zest, juice and remaining oil. Squeeze garlic pulp from skins into the bowl, crush well, and fold in the mint. Pour over the vegetable, and finally mix with the couscous.

 

Smoky beef stew: If it's raining outside, get the comfort of a super-healthy, homemade supper in the office. Whip this up for dinner the night before and simply bundle away the leftovers for a tasty lunch al 'desco.

How to prepare it

  1. The oven should be heated between 140 to 160. You can mix the onions, beef, vinegar, beef, and sugar in a oven dish. Cover and bake it for two and an half hour. After this, you can stir the beans and bake for a maximum of 30 minutes (with the lid off if the oven dish a little wet or lid on if good consistency), until the beef is tender.
  2. Cool, and then freeze in 6-8 portions in small food bags or plastic containers. Defrost in the microwave or overnight in fridge, then heat in the morning and transfer to a thermos container, or heat in the microwave at lunchtime.
