Eggplant Salad

The perfect salad for the cold winter months, the eggplant salad is both filling and lip-smacking. Pair it with bread or crostinis to add a crunch to your meal.
 
To make an Eggplant Salad, you will need:
4 eggplants 
1 stalk of spring onion, finely chopped
2 tablespoons of olive oil
1/4 cup of lemon juice, freshly squeezed
Salt to taste
al alali Ground Black Pepper for taste
Tomato wedges, finely chopped coriander and red and yellow bell peppers for garnishing

Step 1: You will need to roast the eggplants first. For this, you can line a baking dish with a sheet or spray some cooking spray. Preheat the oven to 170 degrees centigrade. Place the eggplants on the tray and put them in the oven. 

Step 2: Let the eggplants be in the oven till they are soft and tender. Once out of the oven, allow them to cool. Once cooled off, peel off the skin of the eggplants. 

Step 3: Gently mash the pulp of the eggplant with a fork. Add in the onions, salt and al alali Ground Black Pepper. Mix this thoroughly.

Step 4: Add the lemon juice, olive oil and give it another mix. Garish with tomatoes and coriander and serve.
