During the fermentation of food, bacteria break down the food. Alcohol is the main product that is released. Although the alcohol produced is of small quantity, this small quantity of alcohol may affect the cells of the human body. 

Fresh foods have high nutrition when they are in the natural, unprocessed stage. But when the food has been tampered with, it loses its nutritional quality. The longer the food is in storage, the more nutrition loss will be. 

The main benefits associated with having fermented food are that they are enriched in vitamin B12, and they also encourage the body to produce vitamin B12.
