Take 1 tablespoon of Cumin seeds, half tablespoon of Caraway seeds, 8 whole dry Red Chilies, 1 teaspoon Turmeric powder, 1 tablespoon Coriander seeds, 2 pieces of Ginger about 1 inch long, half tablespoon Black Peppercorns, 8 Cloves, half tablespoon of whole dry Yellow Mustard seeds, 8 Green Cardamom, 3 Black Cardamom, 2 teaspoon Fenugreek seeds, 2 tablespoon Black Gram, 1 tablespoon Fennel seeds, 4 sticks of Cinnamon 1 inch each, 1 Star Anise, half teaspoon of grated Nutmeg powder, 2 Mace, 1 tablespoon of Poppy seeds (optional) and 1 tablespoon of black Salt (optional).
When you have all these spices in place, take all the spices which are not in powder form. Heat a flat pan and dry roast all the spices one by one except those in powder form.
